Teff is a nutrient rich seed that originates from Ethiopia dating back to ancient times. The seed is especially small, being similar in size to a poppy seed.

As a ‘super food’, Teff is known for the great number of nutrition packed into it including high levels of fibre, calcium and potassium compared to other seeds in its class.

More about Teff

Scientifically named Eragrostis tef, this seed is classed as the smallest in the world and is a staple in the lands of South Africa. While Teff thrives in the hot and dry climates of its home land, its popularity is beginning to attract growers from other parts of the world, including Australia. There is evidence to suggest that this exotic seed actually grows wild in certain parts of New South Wales, however this is not processed for commercial purposes
Being full of nutrients and essential amino acids is not the only draw card, as this tiny seed is also naturally gluten free.

Teff Flour

After having ground the teff seed into flour, it is used to make ‘injera’, a flat, pancake like bread that contains many health benefits thanks to the high amount of fibre, vitamins and minerals. Teff also has more than one look, the most common type of Teff has a rich dark brown colour, but there is also a lovely off-white variety more commonly referred to as Ivory Teff.

Mirfak is now supplying gluten free varieties of Brown Teff Seed to bakeries and other manufacturers. It has become a sought after ingredient as people become curious about the various gluten free seeds that were consumed in the ancient times. Teff has every chance to be the next big thing when it comes to super foods.
