Spelt Grain is pearled (hulled) and graded (cleaned) and then milled using modern 'Stone Ground' technology with no additives or extra processing. The outer husk is removed from the Spelt Grain by a pearling machine. The grading process consists of shaking sieve screens and air aspiration to remove any remaining husk and dust and leave a finished product at 99% purity or higher.To manufacture the flour, Spelt Grain is processed when the Stone Ground flour passes through an internal sieve which can be set to the micron size specified by the customer. The operation is fully enclosed from the outside environment from the start of the production process. The finished product is packed in multi-wall paper sacks as per customer specifications. Wholemeal Spelt Flour passed through a 600-700 micron sieve which produces a flour that contains 100% of the whole grain and goodness that comes with it. Wholemeal Spelt Flour is most popularly used in bread making and other such applications. Spelt is an 'ancient grain' gaining in popularity and is often used to replace wheat and wheat flours.
